Ingredients:​

1 1/3 cups all-purpose flour
2 tablespoons cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, room temperature
1 cup sugar
2 eggs
2 tablespoons buttermilk
2 teaspoons apple cider vinegar
1 teaspoon vanilla extract
1 tablespoon red food coloring

 

Cream Cheese Frosting:

1 pound cream cheese, softened
2 sticks butter, softened

1 teaspoon vanilla extract
4 cups powdered sugar

Amazing Red Velvet Sandwhich Cookies

 

Preheat oven to 375 degrees F. ( Makes About 12- 15 cookies)

Mix together flour, cocoa powder, baking powder, baking soda and salt in a small bowl.

Cream together the butter and sugar until light and fluffy, about 3 minutes. Add the eggs 1 at a time. Then beat in the buttermilk, vinegar, vanilla and red food coloring. Once combined, add the dry ingredients to wet. Mix until thoroughly combined.

Onto a parchment lined sheet tray, drop batter using an ice cream scoop, forming 2-inch round circles.

Bake for 10 minutes, until baked through. Cookies should be cake-like and light. Allow to cool for a few minutes on the baking sheet, then remove to a wire rack to cool completely.

Get Your Favorite brand of box red velvet cake

- Add 1 egg

- 1 teaspoon Vanilla

- 1/2 cup of butter (softened)

  • Melt butter; set aside to cool. Place cake mix, egg, cooled butter and vanilla in large mixing bowl. Mix by hand until well blended and dough is formed.

  • Form dough into a smooth 12" log on wax paper or parchment making sure it is even in thickness end to end. Wrap in wax paper; seal in plastic wrap. Refrigerate 1 hour or overnight.

  • Preheat oven to 350°F. Lightly grease baking sheets. Unwrap dough log and set on wax paper. Using a sharp knife  cut into 48 slices about 1/4" thick. Place on cool baking sheets about 2" apart.

  • Bake, 1 sheet at a time, in center of oven for 10 to 12 minutes or until set. Cool 1 minute. Transfer to wire rack to cool completely.

 

Make sure You have your favorite jar of Cream Cheese or Vanilla Frosting (Sometime I like to use marshmellow fluff)

​* Spread frosting on half the cookies. Top each frosted cookie with another cookie. Gently press together.*
